Northland Blue

Made in the English Stilton style, our Northland Blue has a deep creamy flavour, balancing both sharp and fruiter notes of blue. Blue utilises a full range of cheesemaking techniques, and is turned, pierced and matured for at least 6 months before reaching its full potential.

This is our most batch-dependent cheese, and its taste and texture can fluctuate with seasonal and milk composition changes, much like a vintage of wine.

Our Northland Blue makes a spectacular matching with Port wine. It is also delicious with pears, walnuts and drizzled with honey.
