Hātea Mā

This semi-hard cheese has a crumbly texture, with a hint of butterscotch and a distinctive bitter citrus tang. Hātea is based on a popular English cheese called Red Leicester. We age ours for a minimum of twelve months, but our current stock is vintage at 4 years old! Hatea is named after the local Whangarei river, and mā is white in Maori.
